Ingredients

  • 1 c. raisins
  • 1 c. diced dried apricots
  • 2 c. water
  • 2 c. flour
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 2 eggs, beaten or substitute
  • 1 c. unsweetened applesauce
  • 2 Tbsp. liquid sweetener
  • 3/4 c. vegetable oil
  • 1 tsp. vanilla
  • 1/2 c. chopped nuts

Method

  • Combine raisins, fruit and water in saucepan.
  • Cook uncovered until water is evaporated and fruit is soft.
  • Set aside to cool. In a large bowl, combine flour, soda, salt and cinnamon.
  • In another bowl, combine eggs, applesauce, sweetener, oil, and vanilla.
  • Add nuts and reserved fruit.
  • Stir into dry ingredients and blend thoroughly.
  • Pour into a greased 10-inch fluted tube pan (9 cup size).
  • Bake at 350° for 35 to 40 minutes or until cake tests done.
