- 1 c. raisins
- 1 c. diced dried apricots
- 2 c. water
- 2 c. flour
- 1 tsp. soda
- 1/2 tsp. salt
- 1 1/2 tsp. cinnamon
- 2 eggs, beaten or substitute
- 1 c. unsweetened applesauce
- 2 Tbsp. liquid sweetener
- 3/4 c. vegetable oil
- 1 tsp. vanilla
- 1/2 c. chopped nuts
Method
- Combine raisins, fruit and water in saucepan.
- Cook uncovered until water is evaporated and fruit is soft.
- Set aside to cool. In a large bowl, combine flour, soda, salt and cinnamon.
- In another bowl, combine eggs, applesauce, sweetener, oil, and vanilla.
- Add nuts and reserved fruit.
- Stir into dry ingredients and blend thoroughly.
- Pour into a greased 10-inch fluted tube pan (9 cup size).
- Bake at 350° for 35 to 40 minutes or until cake tests done.
