Ingredients

  • 3 c. flour
  • 1 1/4 c. wheat germ
  • 1 c. chopped nuts
  • 3 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 3/4 c. sugar
  • 2 eggs
  • 2/3 c. vegetable oil
  • 2 tsp. vanilla
  • 3 c. grated zucchini

Method

  • In medium bowl, mix flour, wheat germ, nuts, baking powder, cinnamon and salt.
  • In a large bowl, beat eggs, sugar, oil and vanilla.
  • Stir in zucchini.
  • Gradually stir in flour mixture. Turn into 2 greased and floured 8 1/2 x 4 1/2 x 2 1/2-inch loaf pans.
  • Bake at 350° for one hour or until done.
  • Remove to racks to cool.
