Ingredients

  • 1 (16 oz.) can (no salt) green beans, drained
  • 1 (16 oz.) can yellow wax beans, drained
  • 1 (10 oz.) pkg. frozen English peas, thawed
  • 1 c. chopped green pepper
  • 1 c. thinly sliced purple onion
  • 1 (2 oz.) jar diced pimento, drained
  • 1 tsp. minced fresh garlic
  • 3/4 c. white vinegar
  • 1 Tbsp. vegetable oil
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 16 packets sugar substitute sweetened with aspartame or 8 packets sweetened with acesulfame-K or saccharin

Method

  • Combine first 7 ingredients in a large bowl; set aside. Combine vinegar, oil, salt and pepper in a small saucepan; bring to a boil.
  • Remove from heat; stir in sugar substitute.
  • Pour over vegetables; toss gently.
  • Cover and chill 3 hours, stirring occasionally.
  • Drain before serving. Yields 7 servings.
