Ingredients
- 1/2 c. water
- 1 c. cider vinegar
- non-nutritive sweetener (equivalent to 2 Tbsp. sugar)
- 2 Tbsp. dill pickle, chopped fine
- 1 1/2 tsp. salt
- 2 cucumbers, sliced thin
- 1 stalk celery, sliced thin
Method
- Boil water, vinegar, sweetener, pickle and salt.
- Place cucumbers and celery slices in a glass jar.
- Pour boiling liquid over. Cover and refrigerate overnight. Drain before serving. Yields 2 cups.
