- 1 lb. lean ground beef
- 1 lb. mild pork sausage
- 2 c. fine bread crumbs
- 2 1/4 c. onion, diced
- 2 large eggs
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. oil 3 Tbsp, cornstarch
- 1/2 c. garlic vinegar
- 1/2 c. pineapple juice
- 3/4 c. brown sugar
- 1 Tbsp. Worcestershire sauce
- 1 large green pepper, diced
- 1 (20 oz) can pineapple chunks
- I (8 oz) can tomato sauce
Method
- Combine ground beef, sausage, bread crumbs, onion, eggs, salt and
- pepper. Mix well and shape into l inch meatballs. Brown in hot oil.
- Drain and place meatballs in a 13 x 9 x 2 inch baking dish.
- Combine cornstarch, vinegar, drained pineapple juice and sugar. Cook
- over medium heat or in microwave until clear and thickened.
- Combine with Worcestershire sauce, green pepper, pineapple chunks and
- tomato sauce. Pour over meatballs and bake in 325° oven for 30 to 35
- minutes.
- Makes about 6 dozen, depending on size of meatballs.
