- 1 c. chopped celery
- 1 c. chopped green peppers
- 1/2 c. finely chopped onions
- 1 1/2 c. tomato juice
- 2 Tbsp. cornstarch
- 1/3 c. brown sugar
- 1/4 c. lemon juice
- 1 lb. fresh cooked shrimp
- 2 Tbsp. salad oil
Method
- Heat salad oil until hot.
- Add celery, peppers and onion; brown lightly.
- Work fast and add cornstarch and tomato juice slowly until thickened.
- Add brown sugar and lemon juice; cook 10 minutes. Add shrimp and serve over cooked rice.
