- 4 large or 1 large can sweet potatoes (yams)
- 2 Tbsp. butter or margarine
- 1 Tbsp. salt
- 1/2 lb. pineapple juice (now if needed)
- 1/2 c. brown sugar
- 1/2 Tbsp. cinnamon
- 1 medium can pineapple slices
- 1 small can grated coconut
- 1 large bag marshmallows
Method
- Mash sweet potatoes.
- Add butter, salt, pineapple juice, brown sugar and cinnamon.
- Place pineapple slices in large baking dish. Roll sweet potato mixture around a marshmallow to form a ball. Then roll sweet potato ball in coconut.
- Place ball in the center of a pineapple slice.
- Bake at 250° until marshmallow melts or for 5 minutes.
- Makes 1 to 2 dozen.
