Ingredients

  • 4 large or 1 large can sweet potatoes (yams)
  • 2 Tbsp. butter or margarine
  • 1 Tbsp. salt
  • 1/2 lb. pineapple juice (now if needed)
  • 1/2 c. brown sugar
  • 1/2 Tbsp. cinnamon
  • 1 medium can pineapple slices
  • 1 small can grated coconut
  • 1 large bag marshmallows

Method

  • Mash sweet potatoes.
  • Add butter, salt, pineapple juice, brown sugar and cinnamon.
  • Place pineapple slices in large baking dish. Roll sweet potato mixture around a marshmallow to form a ball. Then roll sweet potato ball in coconut.
  • Place ball in the center of a pineapple slice.
  • Bake at 250° until marshmallow melts or for 5 minutes.
  • Makes 1 to 2 dozen.
