Ingredients
- 3 c. cooked sweet potatoes
- 1/4 c. butter or margarine
- 3/4 c. brown sugar
- 2 Tbsp. milk
- 1/4 tsp. salt
- 1/2 tsp. grated lemon rind
- 8 marshmallows
- 1/2 c. crushed corn flakes
Method
- Mash sweet potatoes.
- Add butter, sugar, milk, salt, and lemon rind.
- Form into 8 balls, using marshmallow as center of each.
- Roll in corn flakes and bake in buttered baking dish at 425 degrees until brown and marshmallow begins to ooze.
