Ingredients
- 4 sweet potatoes (2 lb.)
- 1/2 c. white raisins
- 2 Tbsp. brown sugar
- 1/4 tsp. cinnamon
- 8 oz. crushed pineapple, drained
- 2 Tbsp. chopped pecans
Method
- Bake and peel potatoes (or boil with skins on) at 400° for 1 hour.
- Cool and peel potatoes. Mash pulp and stir in raisins, sugar, cinnamon and pineapple.
- Pour into baking pan and sprinkle with chopped pecans.
- Bake, covered, at 400° for 15 minutes.
