Ingredients
- 1 lb. hamburger
- 1 small onion
- 1 (16 oz.) can tomatoes
- 1 c. rice
- 1/2 to 3/4 pkg. taco mix
- 1 c. shredded cheese
- 2 c. shredded lettuce (optional)
Method
- Brown meat and onion.
- Drain tomatoes.
- Keep juice.
- Add water to juice to make 2 1/2 cups.
- Add tomatoes, liquid, rice and taco mix to meat.
- Simmer about 25 minutes.
- Stir to keep from sticking occasionally.
- Before you serve, melt cheese on top and then lettuce on top.
- You can also crumble tacos and put on top.
