Ingredients

  • 1 1/2 pounds chicken tenderloins
  • 2 tablespoons tandoori paste or other curry paste
  • 5 ounces arugula shredded
  • 2 tomatoes chopped
  • 1 cucumber quartered, sliced
  • cooking spray
  • 1 1/4 cups greek yogurt
  • 2 tablespoons chopped fresh cilantro finely
  • 2 tablespoons lemon juice

Method

  • In a large bowl, combine chicken and tandoori paste, tossing well to coat evenly.
  • In a separate bowl, combine arugula, tomatoes and cucumber. Set aside.
  • Preheat an indoor grill pan over high heat. Spray lightly with oil. Grill chicken for 3-5 mins on each side, until cooked through.
  • In a small bowl, combine yogurt, cilantro, and lemon juice, and season to taste.
  • Serve chicken on salad, drizzled with dressing.
