Ingredients
- 1 1/2 pounds chicken tenderloins
- 2 tablespoons tandoori paste or other curry paste
- 5 ounces arugula shredded
- 2 tomatoes chopped
- 1 cucumber quartered, sliced
- cooking spray
- 1 1/4 cups greek yogurt
- 2 tablespoons chopped fresh cilantro finely
- 2 tablespoons lemon juice
Method
- In a large bowl, combine chicken and tandoori paste, tossing well to coat evenly.
- In a separate bowl, combine arugula, tomatoes and cucumber. Set aside.
- Preheat an indoor grill pan over high heat. Spray lightly with oil. Grill chicken for 3-5 mins on each side, until cooked through.
- In a small bowl, combine yogurt, cilantro, and lemon juice, and season to taste.
- Serve chicken on salad, drizzled with dressing.
