Ingredients

  • 3-4 Tablespoons Olive Oil
  • 4 Large Sweet Onions (Vidalia, If Possible), Cut Into Thick Slices
  • 1/2 Teaspoon Freshly Ground Pepper
  • 1/4 Cup Brown Sugar
  • 1/4 Cup Apple Cider Vinegar
  • 4-6 Boneless Smoked Pork Chops

Method

  • In a large skillet, add onion slices and sprinkle with pepper.
  • Cook onions over medium heat, stirring frequently, about 15-20 minutes, until golden and caramelized.
  • (If skillet is large enough, push onions to the side, or else remove them until pork chops are in place.)
  • Add boneless smoked pork chops to skillet.
  • Heat for one minute on each side over medium heat.
  • Place onions over chops.
  • Mix together in a small bowl the brown sugar and vinegar, and drizzle over onions.
  • Simmer about 10 minutes, stirring frequently, until sugar is dissolved, onions are well coated with sauce, and dish is bubbly hot.
  • NOTE: You may use the pork chops of your choice.
  • Cook until pork is thoroughly cooked.
  • I use smoked chops for ease and convenience.
