Ingredients

  • 2 tablespoons superfine sugar
  • 1 ounce tamarind concentrate
  • 1 1/2 ounces fresh lemon juice
  • 8 ounces club soda, more to taste
  • Angostura bitters, for serving
  • 4 3-inch strips orange zest, for garnish

Method

  • In a cocktail shaker, combine sugar with 2 tablespoons hot tap water and shake until sugar dissolves.
  • Add tamarind and lemon; shake well.
  • Pour into ice-filled highball glasses.
  • Top with club soda and add two dashes of bitters to each glass.
  • Hold each orange strip under a match or lighter for 10 seconds until it just begins to color.
  • Twist strips and drop one into each drink; serve.
