Ingredients

  • 4 large eggs
  • 1 1/2 tsp olive oil
  • 1 salt and pepper to taste
  • 1 red pepper flakes to taste
  • 1 1/2 tsp salted butter, cold from refrigerator

Method

  • These are very specific instructions.
  • To achieve perfect results please follow exactly.
  • In a 12" skillet that has lid, heat skillet on low heat.
  • Once skillet is hot, just a minute or two add oil.
  • Allow oil to get hot.
  • Then add butter.
  • Crack all four eggs into a bowl.
  • Then season to taste with salt and pepper and if you like, red pepper flakes.
  • Once butter has melted too add eggs raising heat to medium-high.
  • Cook exactly one minute, covered.
  • Turn off heat and continue to cook covered for 1 minutes for looser yolks, 1 1/2 minutes for a firmer yolk, but still runny.
  • Whites will be cooked through.
