Ingredients
- 4 large eggs
- 1 1/2 tsp olive oil
- 1 salt and pepper to taste
- 1 red pepper flakes to taste
- 1 1/2 tsp salted butter, cold from refrigerator
Method
- These are very specific instructions.
- To achieve perfect results please follow exactly.
- In a 12" skillet that has lid, heat skillet on low heat.
- Once skillet is hot, just a minute or two add oil.
- Allow oil to get hot.
- Then add butter.
- Crack all four eggs into a bowl.
- Then season to taste with salt and pepper and if you like, red pepper flakes.
- Once butter has melted too add eggs raising heat to medium-high.
- Cook exactly one minute, covered.
- Turn off heat and continue to cook covered for 1 minutes for looser yolks, 1 1/2 minutes for a firmer yolk, but still runny.
- Whites will be cooked through.
