Ingredients

  • 1/4 cup cholled onion
  • 1 Tablespoon olive oil
  • 1 beef bouillon cube
  • 3/4 cup boiling water
  • 1 1/2 teaspoons lemon or lime juice
  • 1 Tablespoon parsley
  • 1/3 cup coarsely chopped tomato
  • 1/3 cup rice
  • 1/4 chopped shelled natural pistachios

Method

  • Saute onion in oil until tender. Dissolve bouillon cube in water. Add to onion mixture with rice and lemon juice. Cover and simmer 30 minutes or until rice is tender. Stir in tomatoes, pistachios, and parsley. Makes 2 -3 servings.
