Ingredients

  • 16 oz. tortellini
  • 1/2 large red bell pepper, chopped
  • 1 shallot, chopped
  • 1 Tbsp. balsamic vinegar
  • 3/4 c. peas (frozen)
  • 1/2 c. virgin olive oil
  • 1/2 c. pure olive oil
  • 2 Tbsp. basil

Method

  • Boil the peas with the tortellini according to the tortellini package instructions, usually 10 minutes.
  • In large glass bowl, mix both virgin olive and pure olive oils, balsamic vinegar, red pepper, shallot and basil.
  • After draining the tortellini and peas, add to olive oil mixture and stir.
  • Place in refrigerator for 30 minutes.
  • Heat and serve.
