Ingredients
- 16 oz. tortellini
- 1/2 large red bell pepper, chopped
- 1 shallot, chopped
- 1 Tbsp. balsamic vinegar
- 3/4 c. peas (frozen)
- 1/2 c. virgin olive oil
- 1/2 c. pure olive oil
- 2 Tbsp. basil
Method
- Boil the peas with the tortellini according to the tortellini package instructions, usually 10 minutes.
- In large glass bowl, mix both virgin olive and pure olive oils, balsamic vinegar, red pepper, shallot and basil.
- After draining the tortellini and peas, add to olive oil mixture and stir.
- Place in refrigerator for 30 minutes.
- Heat and serve.
