Ingredients

  • 1 (9 inch) deep dish pastry shell or possibly your own crust
  • 2 avocados
  • 1 clove garlic
  • 3 tbsp. lemon juice
  • 1 tomato, minced
  • 4 ounce. grnd chilies, minced
  • 1/4 teaspoon warm pepper sauce
  • 8 ounce. grnd beef
  • 1 to 2 tbsp. taco seasoning
  • 1 1/2 c. Cheddar cheese, shredded
  • 1/4 c. onion, minced
  • 3 Large eggs, slightly beaten
  • 1 1/2 c. half and half
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • Lettuce, shredded
  • Corn chips
  • Tomato, minced

Method

  • Preheat oven to 400 degrees.
  • Bake shell 7 min.
  • Mix avocados, garlic, lemon juice, 1 minced tomato, 1 Tbsp.
  • chilies and pepper sauce.
  • Cover and chill.
  • Reduce oven to 375 degrees.
  • Saute/fry beef, onion, rest of chilies and taco seasonings, drain.
  • Layer cheese and beef mix in shell.
  • Combine Large eggs, half and half, salt and pepper.
  • Whisk till mixed.
  • Pour over meat in shell.
  • Bake 45 min or possibly till hard.
  • Let stand 10 min or possibly chill.
  • Top with avocado mix.
  • Serve with chips.
  • Bed of shredded lettuce (optional), with more tomato.
  • 6 servings.
