Ingredients

  • 1 tsp. finely chopped onions
  • 4 Tbsp. chopped mushrooms
  • 3 Tbsp. butter
  • 2 Tbsp. flour
  • 2/3 c. milk
  • 3 Tbsp. sharp cheese, grated
  • 2 egg yolks
  • 1 c. tuna fish
  • 1/2 tsp. salt
  • 1/2 tsp. paprika
  • 24 rounds of toast
  • buttered bread crumbs

Method

  • Fry onions and mushrooms in butter for 5 minutes.
  • Blend in flour.
  • Add milk gradually; heat to boiling.
  • Remove from heat. Stir in cheese, egg yolks, tuna and seasoning.
  • Allow to cool; spread on toast.
  • Cover with bread crumbs and brown in oven!
