Ingredients

  • 1 pound turkey smoked sausage
  • 2 tbsp. butter
  • 1/2 c. sliced fresh mushrooms
  • 1/2 c. sliced carrots
  • 1 med. zucchini, cut into halves lengthwise and sliced (1 1/4 c.)
  • 1 can (8 ounce.) stewed tomatoes, undrained
  • 1 c. water
  • 1/4 teaspoon basil
  • 1/4 teaspoon thyme
  • 1 1/2 c. uncooked instant rice

Method

  • Cut sausage into serving size pcs; set aside.
  • Heat butter in large skillet over medium-high heat.
  • Add in mushrooms, carrots and zucchini; saute/fry 3 min.
  • Stir in tomatoes with juice, water, basil, thyme and sausage; bring to a boil.
  • Reduce heat to low; cover and simmer 5 min.
  • Mix rice into liquid.
  • Cover, remove from heat and let stand 8 min, stirring after 4 min.
  • Makes 4 servings.
