Ingredients

  • 6 pounds yams (9 large or 12 medium)
  • 8 oz bacon
  • 1/4 cup Progresso plain bread crumbs
  • 1 tablespoon butter melted
  • 1/2 cup sour cream
  • 1/4 cup butter softened
  • 2 medium green onions chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Method

  • Heat oven 350. Bake yams 75 minutes or until tender. Allow to cool then peel potatoes and place in bowl and mash. Add chopped bacon, sour cream, 1/4 cup butter, onions, salt and pepper. Using 1/2 cup ice cream scoop to place in baking dish. Sprinkle bread crumbs evenly over top. Bake 20-30 minutes or until bread crumbs begin to brown.
