Ingredients
- 6 pounds yams (9 large or 12 medium)
- 8 oz bacon
- 1/4 cup Progresso plain bread crumbs
- 1 tablespoon butter melted
- 1/2 cup sour cream
- 1/4 cup butter softened
- 2 medium green onions chopped
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Method
- Heat oven 350. Bake yams 75 minutes or until tender. Allow to cool then peel potatoes and place in bowl and mash. Add chopped bacon, sour cream, 1/4 cup butter, onions, salt and pepper. Using 1/2 cup ice cream scoop to place in baking dish. Sprinkle bread crumbs evenly over top. Bake 20-30 minutes or until bread crumbs begin to brown.
