Ingredients

  • 3 tablespoons heavy cream
  • 2 ounces dark chocolate chopped
  • 2 tablespoons butter
  • 1/2 cinnamon stick
  • 1/2 vanilla bean split lengthwise
  • 1 1/2 Granny Smith apples or Gala, cored and thinly sliced
  • 2 teaspoons sugar
  • 1 pear small, cored and diced
  • mint sprigs for garnish

Method

  • Heat the cream in a saucepan until just warm, then stir in the chocolate until melted. Remove from the heat and cool, stirring occasionally.
  • Melt the butter in a separate saucepan over medium heat. Add the cinnamon stick and scrape in the vanilla seeds. Cook, stirring, for 1-2 mins. Add the apple slices, sprinkle with half of the sugar and cook for 2-3 mins, turning often. Transfer the apple slices to two plates. Add the pear to the saucepan, sprinkle with the remaining sugar and cook for 1-2 mins. Scatter the pear over the apple slices. Drizzle over some of the chocolate sauce and garnish with mint sprigs. Serve the remaining chocolate sauce on the side.
