Ingredients

  • 2-1/2 cups All-purpose Flour
  • 2 teaspoons Baking Soda
  • 2 teaspoons Ground Cinnamon
  • 1/2 teaspoons Nutmeg
  • 4 teaspoons Ground Ginger
  • 1/2 teaspoons Salt
  • 3/4 cups Softened Butter
  • 1 cup Packed Dark Brown Sugar
  • 1-1/2 teaspoon Vanilla
  • 1 Egg
  • 1/4 cups Fancy Molasses
  • 1/3 cups White Sugar, For Rolling

Method

  • Combine dry ingredients in a bowl.
  • Combine butter, brown sugar, and vanilla in another bowl. Then add the egg and molasses.
  • Add dry ingredients to wet ingredients. Mix well. Roll dough into 1-inch balls and roll in white sugar. Bake at 340°F for 9 minutes-no more. They will seem under-baked, but that is what you want. Cool for a few minutes on the cookie sheet before moving to a wire rack.
