Ingredients
- 6 cups seedless watermelon
- 1/2 cup lemon juice freshly squeezed, about 4 lemons
- 1/4 cup sugar
- 1/4 cup lite coconut milk unsweetened
- 1 tablespoon mint freshly chopped, or more to taste
Method
- Place freshly squeezed lemon juice and sugar into your KitchenAid(R) Blender.
- Remove the outside rind of your seedless watermelon and cut it into 1-inch chunks.
- Place the watermelon pieces into the blender. Puree until smooth. If there happens to be any black seeds in your watermelon, use a fork to remove as many as you can find at this point.
- Add the coconut milk and blend until incorporated.
- Chop the mint into small pieces and stir into the watermelon drink.
- Remove the pitcher from the base and place into the refrigerator to chill for at least 30 minutes. Stir before serving.
