Ingredients
- 9 lb. watermelon rind
- 9 lb. sugar
- 1 pkg. lily lime
- 1 box stick cinnamon
- 2 Tbsp. whole allspice
- 2 Tbsp. cloves
- 1 qt. vinegar
- green cake color
Method
- Slice rind in small thin pieces.
- Soak overnight in lily lime. Rinse in the morning and put in boiler; cover with water and cook 3 hours.
- Add green cake color, spices, vinegar and sugar; cook until tender.
- Put in jars and seal.
