Ingredients

  • 1/4 c. Egg Beaters
  • 2 c. bread crumbs
  • 3 c. mashed potatoes
  • 1/4 c. onions, chopped fine
  • 2 c. boneless chicken, cooked and diced
  • 1 can mixed veggies
  • 1/2 c. chicken broth

Method

  • Preheat oven to 350°.
  • In medium-size bowl, mix eggs and potatoes together and set aside.
  • Spray bottom of an 8 x 8-inch pan with Pam.
  • Place chicken in single layer; add veggies and onions on top of chicken.
  • Take potato mixture and drop by spoonfuls on top of that.
  • Sprinkle bread crumbs over all.
  • Bake for 30 minutes, until top browns.
  • Very good low-cholesterol recipe.
