Ingredients
- 1/4 c. Egg Beaters
- 2 c. bread crumbs
- 3 c. mashed potatoes
- 1/4 c. onions, chopped fine
- 2 c. boneless chicken, cooked and diced
- 1 can mixed veggies
- 1/2 c. chicken broth
Method
- Preheat oven to 350°.
- In medium-size bowl, mix eggs and potatoes together and set aside.
- Spray bottom of an 8 x 8-inch pan with Pam.
- Place chicken in single layer; add veggies and onions on top of chicken.
- Take potato mixture and drop by spoonfuls on top of that.
- Sprinkle bread crumbs over all.
- Bake for 30 minutes, until top browns.
- Very good low-cholesterol recipe.
