Ingredients

  • 1 box Uncle Ben's long grain and wild rice (original recipe)
  • 1/3 c. melted margarine
  • 1/3 c. flour
  • 1/2 tsp. salt
  • dash of black pepper
  • 1 c. half and half
  • 1 c. chicken broth
  • 2 c. cubed cooked chicken (may be canned)
  • 1/3 c. chopped pimento
  • 1/3 c. chopped parsley
  • 1/2 c. chopped, blanched almonds (reserve some to sprinkle on top)

Method

  • Cook Uncle Ben's as directed on box.
  • In separate pan, saute margarine.
  • Blend in flour, salt and pepper.
  • Gradually stir in half and half and chicken broth.
  • Cook until thickened.
