Ingredients

  • 2 tablespoons (2 envelopes) unflavored gelatin
  • 1/2 cup cold water
  • 3 cups claret
  • 1/2 cup sweet Madeira
  • 1/2 cup strained orange juice
  • 1/3 cup sugar

Method

  • Soften the gelatin in the cold water.
  • In a stainless steel or enamel-coated saucepan heat together, without boiling, the claret, Madeira, and orange juice.
  • Dissolve the sugar in the heated liquids.
  • Add the softened gelatin and stir to dissolve it also.
  • Cool the mixture, pour into a mold, and chill until set.
  • Unmold onto a chilled serving platter.
