Ingredients

  • 4 or 5 medium squash
  • 1 medium chopped onion
  • 1 can cream of chicken soup
  • 1 c. sour cream
  • 1 c. shredded carrots
  • 1 stick margarine
  • 6 oz. Stove Top stuffing

Method

  • Peel and slice squash.
  • Cook squash and onion in water for 5 minutes; drain.
  • Mix together soup and sour cream.
  • Fold carrots, squash and onion into soup and sour cream mixture.
  • Melt margarine in saucepan and stir in stuffing.
  • Spread 1/2 of stuffing in greased 8 x 8 x 2-inch glass dish.
  • Pour vegetable mixture over stuffing.
  • Top with other 1/2 of stuffing.
  • Bake at 350° for 30 minutes.
  • Let stand 15 minutes before serving.
