Ingredients
- 4 or 5 medium squash
- 1 medium chopped onion
- 1 can cream of chicken soup
- 1 c. sour cream
- 1 c. shredded carrots
- 1 stick margarine
- 6 oz. Stove Top stuffing
Method
- Peel and slice squash.
- Cook squash and onion in water for 5 minutes; drain.
- Mix together soup and sour cream.
- Fold carrots, squash and onion into soup and sour cream mixture.
- Melt margarine in saucepan and stir in stuffing.
- Spread 1/2 of stuffing in greased 8 x 8 x 2-inch glass dish.
- Pour vegetable mixture over stuffing.
- Top with other 1/2 of stuffing.
- Bake at 350° for 30 minutes.
- Let stand 15 minutes before serving.
