Ingredients

  • 1 lb. ground beef
  • 1 c. chopped onion
  • 1 14 1/2 oz. can zesty diced tomatoes w/ mild chilies
  • 1 c. dried elbow macaroni
  • 1 c. water
  • 1 c. shredded cheddar cheese
  • sliced green onions, if desired
  • sour cream, if desired

Method

  • Brown meat and onion in large skillet.
  • Drain, season with salt and pepper if desired.
  • Add undrained tomatoes and water; bring to a boil.
  • Stir in macaroni. Cover and simmer for 10 minutes or until pasta is cooked.
  • Stir in cheese. Garnish with sliced green onions and sour cream if desired.
