- 3 c. sifted flour
- 2 tsp. baking soda
- 1/2 tsp. baking powder
- 1 tsp. salt
- 3/4 c. chopped pecans
- 3 eggs
- 2 c. sugar
- 1 c. vegetable oil
- 2 tsp. vanilla
- 2 c. shredded zucchini
- 1 (18 oz.) can crushed pineapple, drained
- 1/2 c. raisins
Method
- Sift first 4 ingredients together and mix in chopped pecans; set aside.
- Beats eggs lightly in a large mixing bowl; add sugar, oil and vanilla.
- Beat until creamy.
- Stir in zucchini, pineapple and raisins.
- Add dry ingredients and stir only until ingredients are moist.
- Spoon batter into 2 well-greased and floured loaf pans.
- Bake at 350° for 1 hour.
- Cool 10 minutes in pans.
