Ingredients

  • 3 c. sifted flour
  • 2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 tsp. salt
  • 3/4 c. chopped pecans
  • 3 eggs
  • 2 c. sugar
  • 1 c. vegetable oil
  • 2 tsp. vanilla
  • 2 c. shredded zucchini
  • 1 (18 oz.) can crushed pineapple, drained
  • 1/2 c. raisins

Method

  • Sift first 4 ingredients together and mix in chopped pecans; set aside.
  • Beats eggs lightly in a large mixing bowl; add sugar, oil and vanilla.
  • Beat until creamy.
  • Stir in zucchini, pineapple and raisins.
  • Add dry ingredients and stir only until ingredients are moist.
  • Spoon batter into 2 well-greased and floured loaf pans.
  • Bake at 350° for 1 hour.
  • Cool 10 minutes in pans.
