Ingredients

  • 4 c. zucchini, sliced or chunks
  • 2 eggs or Egg Beaters
  • 1 c. low-fat mayonnaise
  • 1 c. chopped onion
  • 1/4 c. chopped green pepper
  • 1 c. grated Italian cheese
  • salt and pepper
  • 2 Tbsp. bread crumbs or crumbled potato chips or Ritz crackers
  • garlic salt
  • parsley
  • pinch of dill
  • 1 pkg. sliced frozen carrots
  • 1 Tbsp. butter or oil

Method

  • Cook or steam zucchini until tender; drain.
  • In large bowl beat eggs, stir in mayonnaise, onions, green peppers, herbs and add zucchini.
  • Turn into greased 1 1/2-quart baking dish. Sprinkle with crumbs and dot with butter.
  • Bake at 350° for 30 minutes.
