- 4 c. zucchini, sliced or chunks
- 2 eggs or Egg Beaters
- 1 c. low-fat mayonnaise
- 1 c. chopped onion
- 1/4 c. chopped green pepper
- 1 c. grated Italian cheese
- salt and pepper
- 2 Tbsp. bread crumbs or crumbled potato chips or Ritz crackers
- garlic salt
- parsley
- pinch of dill
- 1 pkg. sliced frozen carrots
- 1 Tbsp. butter or oil
Method
- Cook or steam zucchini until tender; drain.
- In large bowl beat eggs, stir in mayonnaise, onions, green peppers, herbs and add zucchini.
- Turn into greased 1 1/2-quart baking dish. Sprinkle with crumbs and dot with butter.
- Bake at 350° for 30 minutes.
