Ingredients

  • 4 c. thinly sliced zucchini
  • 1 c. chopped onion
  • 1/3 c. margarine
  • 1/2 c. chopped parsley
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. garlic powder
  • 1/4 tsp. basil
  • 1/4 tsp. oregano
  • 2 eggs
  • 8 oz. shredded Mozzarella
  • 1 can crescent rolls

Method

  • Cook zucchini and onion in margarine for 10 minutes.
  • Combine beaten eggs with zucchini mixture.
  • Add remaining ingredients and mix well.
  • Separate and spread the crescent rolls into a pie pan or casserole dish.
  • Pour mixture in and cook for 20 minutes in 375° oven.
  • Let stand for 10 minutes.
