Ingredients

  • 3 c. chopped, peeled apples
  • 3 c. plain flour
  • 2 1/2 c. sugar
  • 1 1/4 c. vegetable oil
  • 4 eggs, beaten
  • 1 tsp. vanilla
  • 2 tsp. cinnamon
  • 1 1/2 tsp. salt
  • 1 1/2 tsp. baking soda
  • 1 tsp. cloves
  • 1/2 tsp. baking powder
  • 2/3 c. raisins
  • 1/2 c. chopped pecans

Method

  • Preheat oven to 325°.
  • Generously grease 2 loaf pans or 16 muffin pans.
  • Sift dry ingredients together; add oil, eggs, apples, vanilla, raisins and pecans to dry ingredients and mix well.
  • Pour
  • into
  • pans.
  • Bake
  • until
  • toothpick
  • inserted
  • in center comes
  • out
  • clean, about 1 hour for loaf pans and 30 to 45 minutes
  • for
  • muffins.
  • Cool 10 minutes;
  • remove from pans. Cool completely before slicing.
  • Refrigerate.
