Ingredients

  • 1 pound flanken or london broil steak
  • 1 12 oz.bottle sesame ginger marinade (Ken's Steak House or Lawry's)
  • 1 pound fettucini pasta
  • 1 cup cucumber washed, quartered and diced
  • 2 stalks scallion, washed and sliced thin on an angle
  • 1/2 cup dry roasted peanuts, chopped
  • Asian Dressing

Method

  • Using a fork, poke holes into steak to prepare for marinade sauce. Marinate the steak in the sesame ginger marinade at least one hour, overnight is better.
  • Preheat grill to 350 degrees. Remove steak from marinade and cook on the grill approximately 45-60 minutes (depends on how thick the steak is) or until meat thermometer registers 140 degrees. Use the marinade to brush on the meat while cooking. Remove steak from grill. Discard marinade. Allow meat to rest for at least 10-15 minutes. Can be made ahead and refrigerated, covered, for up to 1 hour.
  • Cook pasta according to package directions. Allow to cool to room temperature before using in salad. Can be refrigerated.
  • Assemble cucmber, scallion and peanut condiments in separate bowls.
  • Slice the steak in thin cuts across the grain.
  • Plate pasta, slices of steak, cucumbers, scallions and peanuts. Top with the Asian dressing.
  • Serve chilled or room temp.
  • Asian Dressing:
  • 3 tablespoons low sodium ginger flavored soy sauce
  • 3 tablespoons cider vinegar
  • 1 tablespoon sugar
  • 1/2 inch piece of fresh ginger, peeled and chopped or 1/4 teaspoon ground ginger
  • 1 clove garlic, chopped
  • 1/3-1/2 cup smooth peanut butter
  • 1/2 cup white wine
  • 1 tablespoon sesame oil
  • 1/2-1 teaspoon dried crushed red pepper
  • In a blender, mix all dressing ingredients thouroughly. Adjust flavors as needed. Serve over Asian Beef Salad.
