- 1/2 c. butter or oleo
- 1/2 c. chopped onions
- 1/2 c. chopped green bell peppers
- 1 (16 oz.) can whole kernel corn
- 1 (16 oz.) can cream-style corn
- 1 (8 oz.) pkg. corn muffin mix
- 1 c. (full) Cheddar cheese, shredded
- 1 c. sour cream
- 3 eggs, slightly beaten
Method
- Preheat
- oven
- to
- 350°.
- Melt
- the
- butter and oleo in large skillet
- and
- saute
- onions
- and
- peppers until tender. Combine corn (including liquid), eggs, sour cream, cheese and muffin
- mix with
- the
- sauteed onions and peppers.
- Pour into (vegetable spray coated) baking dish.
- Bake for 45 minutes in a 350° preheated oven.
