Ingredients

  • 1/2 c. butter or oleo
  • 1/2 c. chopped onions
  • 1/2 c. chopped green bell peppers
  • 1 (16 oz.) can whole kernel corn
  • 1 (16 oz.) can cream-style corn
  • 1 (8 oz.) pkg. corn muffin mix
  • 1 c. (full) Cheddar cheese, shredded
  • 1 c. sour cream
  • 3 eggs, slightly beaten

Method

  • Preheat
  • oven
  • to
  • 350°.
  • Melt
  • the
  • butter and oleo in large skillet
  • and
  • saute
  • onions
  • and
  • peppers until tender. Combine corn (including liquid), eggs, sour cream, cheese and muffin
  • mix with
  • the
  • sauteed onions and peppers.
  • Pour into (vegetable spray coated) baking dish.
  • Bake for 45 minutes in a 350° preheated oven.
