Ingredients

  • 4 boneless chicken breasts
  • canola oil or melted butter
  • 1 bell pepper
  • 1 onion
  • 2 c. grated Cheddar cheese
  • salsa
  • 1 pkg. flour tortillas
  • 1/2 pt. sour cream
  • guacamole

Method

  • Brush chicken with canola oil or butter and broil on each side.
  • After broiling, cut chicken into strips.
  • Dice green pepper and onion and saute in butter, then mix into the chicken strips. Grease the bottom of a casserole dish and layer tortillas, chicken mixture, salsa and cheese.
  • Repeat layers until you run out of chicken mixture.
  • Top with tortillas, then grated cheese.
