- 4 boneless chicken breasts
- canola oil or melted butter
- 1 bell pepper
- 1 onion
- 2 c. grated Cheddar cheese
- salsa
- 1 pkg. flour tortillas
- 1/2 pt. sour cream
- guacamole
Method
- Brush chicken with canola oil or butter and broil on each side.
- After broiling, cut chicken into strips.
- Dice green pepper and onion and saute in butter, then mix into the chicken strips. Grease the bottom of a casserole dish and layer tortillas, chicken mixture, salsa and cheese.
- Repeat layers until you run out of chicken mixture.
- Top with tortillas, then grated cheese.
