Ingredients
- 1 egg
- 1 c. milk
- 1 c. honey
- 4 Tbsp. (1/2 stick) butter or margarine, melted
- 4 large bananas
- 2 c. quick cooking oats
- 3 c. flour
- 1 Tbsp. baking powder
- 2 tsp. baking soda
- 1 tsp. salt
- 1 c. walnuts
Method
- Preheat oven to 400°.
- Grease 24 muffin tin cups.
- Mix egg, milk, honey and melted butter or margarine together.
- Mash the bananas with a fork and add to mixture.
- Mix flour, oatmeal, nuts, baking powder, soda and salt together. Add to banana mixture. Stir until just moistened.
- Do not beat. Fill muffin cups.
- Bake 20 to 25 minutes or until tested with a toothpick. Remove from pan. Cool. Serve warm or cold.
