Ingredients

  • 1 egg
  • 1 c. milk
  • 1 c. honey
  • 4 Tbsp. (1/2 stick) butter or margarine, melted
  • 4 large bananas
  • 2 c. quick cooking oats
  • 3 c. flour
  • 1 Tbsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1 c. walnuts

Method

  • Preheat oven to 400°.
  • Grease 24 muffin tin cups.
  • Mix egg, milk, honey and melted butter or margarine together.
  • Mash the bananas with a fork and add to mixture.
  • Mix flour, oatmeal, nuts, baking powder, soda and salt together. Add to banana mixture. Stir until just moistened.
  • Do not beat. Fill muffin cups.
  • Bake 20 to 25 minutes or until tested with a toothpick. Remove from pan. Cool. Serve warm or cold.
