Ingredients

  • 3/4 c. sugar
  • 3 Tbsp. plain flour
  • 4 eggs
  • 2 c. milk
  • 1/2 tsp. vanilla
  • Nilla wafers
  • 5 to 6 ripe bananas

Method

  • Mix 1/2 cup sugar with flour in top of double boiler; add 1 whole egg and 3 egg yolks and add milk and blend thoroughly.
  • Cook uncovered over boiling water until thickened.
  • Remove from heat; add vanilla.
  • Layer in baking dish custard, wafers and bananas, ending with custard.
  • Stand wafers around edge of dish.
  • Whip remaining 3 egg whites with 1/4 cup sugar until stiff peaks form. Spread over custard, touching wafers all around.
  • Bake at 425° until delicately browned.
