Ingredients
- 3/4 c. sugar
- 3 Tbsp. plain flour
- 4 eggs
- 2 c. milk
- 1/2 tsp. vanilla
- Nilla wafers
- 5 to 6 ripe bananas
Method
- Mix 1/2 cup sugar with flour in top of double boiler; add 1 whole egg and 3 egg yolks and add milk and blend thoroughly.
- Cook uncovered over boiling water until thickened.
- Remove from heat; add vanilla.
- Layer in baking dish custard, wafers and bananas, ending with custard.
- Stand wafers around edge of dish.
- Whip remaining 3 egg whites with 1/4 cup sugar until stiff peaks form. Spread over custard, touching wafers all around.
- Bake at 425° until delicately browned.
