Ingredients

  • 4 medium bananas
  • 1/4 c. brown sugar
  • 1/2 c. orange juice
  • 1/2 c. pineapple juice or sherry
  • 2 tsp. lemon juice
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cinnamon
  • 1 c. flake coconut
  • 2 Tbsp. butter or margarine
  • 2 tsp. rum flavoring or 2 Tbsp. rum
  • 1 qt. vanilla ice cream

Method

  • Preheat oven to 450°.
  • Peel bananas and quarter each banana by cutting first lengthwise and then in half.
  • Place in buttered baking dish.
  • Combine brown sugar with liquids and spices; heat. Pour over bananas.
  • Spread with coconut and dot with butter. Sprinkle with rum flavoring or rum.
  • Bake 15 to 20 minutes or until bananas are tender.
  • Serve over vanilla ice cream.
