- 4 medium bananas
- 1/4 c. brown sugar
- 1/2 c. orange juice
- 1/2 c. pineapple juice or sherry
- 2 tsp. lemon juice
- 1/4 tsp. nutmeg
- 1/4 tsp. cinnamon
- 1 c. flake coconut
- 2 Tbsp. butter or margarine
- 2 tsp. rum flavoring or 2 Tbsp. rum
- 1 qt. vanilla ice cream
Method
- Preheat oven to 450°.
- Peel bananas and quarter each banana by cutting first lengthwise and then in half.
- Place in buttered baking dish.
- Combine brown sugar with liquids and spices; heat. Pour over bananas.
- Spread with coconut and dot with butter. Sprinkle with rum flavoring or rum.
- Bake 15 to 20 minutes or until bananas are tender.
- Serve over vanilla ice cream.
