Ingredients

  • 1 lb. baked beans in tomato sauce (no pork)
  • 2 Tbsp. chopped onion
  • 4 to 5 oz. lean rib pork chops
  • prepared mustard
  • catsup
  • lemon juice
  • non-caloric liquid sweetener
  • 1 onion, sliced
  • lemon slices

Method

  • Combine baked beans in tomato sauce (no pork) and 2 tablespoons chopped onion.
  • Place in 10 x 6 x 1 1/2-inch baking dish.
  • Trim fat off 4 to 5 ounces lean rib pork chops.
  • Season. Spread generously with prepared mustard and catsup.
  • Sprinkle with lemon juice and non-caloric liquid sweetener.
  • Place over beans. Bake at 325° for 1 1/4 hours.
  • Top each chop with 1 onion, sliced and 1 lemon slice. Secure with wooden pick.
  • Bake 15 minutes more.
