Ingredients
- 2.5 lb Beef Shoulder
- 1 tbsb Ground Clove
- 2 slices Orange Peel
- 2 Bay Leaves
- 1 bottle Burgundy
- Beef Stock
- Pearl Onion
- Carrots
- Mushrooms
- Red Potatoes
- Chives for garnish
- Serve w/ Peasant Garlic Bread
Method
- Cut beef in 1.5 inch cubes.
- Dredge in flour.
- Sear off in butter/olive oil.
- Remove.
- Deglaze with wine.
- Add stock, clove, bay, orange, garlic
- Return beef.
- Simmer 2 hours.
- Add veggies, cook another 30 min.
- Garnish with chives.
