Ingredients

  • 1 lb. black beans
  • 10 c. water
  • 2/3 c. olive oil
  • 1 big onion, minced
  • 4 cloves garlic
  • 1 green pepper
  • 4 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. oregano
  • 2 tsp. sugar
  • 2 tsp. vinegar
  • 2 tsp. dry wine
  • 1 laurel leaf
  • 2 tsp. olive oil

Method

  • Wash beans and put them in water for several hours.
  • Cook them in same water.
  • In a separate pan, heat the 2/3 cup olive oil. Saute the onion, green pepper and garlic; add to beans.
  • Also add salt, pepper, oregano, lauren leaf and sugar.
  • Bring to boil; cook for another hour.
  • Add vinegar and dry wine and cook at low heat for another hour.
  • When ready to serve, add the 2 teaspoons olive oil.
