- 1 lb. black beans
- 10 c. water
- 2/3 c. olive oil
- 1 big onion, minced
- 4 cloves garlic
- 1 green pepper
- 4 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. oregano
- 2 tsp. sugar
- 2 tsp. vinegar
- 2 tsp. dry wine
- 1 laurel leaf
- 2 tsp. olive oil
Method
- Wash beans and put them in water for several hours.
- Cook them in same water.
- In a separate pan, heat the 2/3 cup olive oil. Saute the onion, green pepper and garlic; add to beans.
- Also add salt, pepper, oregano, lauren leaf and sugar.
- Bring to boil; cook for another hour.
- Add vinegar and dry wine and cook at low heat for another hour.
- When ready to serve, add the 2 teaspoons olive oil.
