Ingredients
- 2 c. fine dry bread crumbs
- 3/4 c. grated Parmesan cheese
- 1/4 c. finely minced parsley
- 1 tsp. paprika
- 3/4 tsp. oregano
- 1/2 tsp. red pepper
- 12 fish fillets (catfish works well)
- olive oil
Method
- Combine all ingredients except olive oil in a shallow pan. Pour olive oil in a pie pan and dip each fillet in the oil; roll in the bread crumb mixture.
- Place fish in a pan (greased or sprayed).
- Bake for about 20 minutes or until fish flakes when tested with a fork.
- Bake at 375°.
