Ingredients

  • 2 c. fine dry bread crumbs
  • 3/4 c. grated Parmesan cheese
  • 1/4 c. finely minced parsley
  • 1 tsp. paprika
  • 3/4 tsp. oregano
  • 1/2 tsp. red pepper
  • 12 fish fillets (catfish works well)
  • olive oil

Method

  • Combine all ingredients except olive oil in a shallow pan. Pour olive oil in a pie pan and dip each fillet in the oil; roll in the bread crumb mixture.
  • Place fish in a pan (greased or sprayed).
  • Bake for about 20 minutes or until fish flakes when tested with a fork.
  • Bake at 375°.
