Ingredients

  • 2 (10 oz.) containers Brussels sprouts
  • 1 medium lemon
  • 4 Tbsp. butter
  • 1 (10 oz.) pkg. frozen peas
  • 1/2 tsp. salt
  • 1/4 tsp. coarsely ground black pepper

Method

  • Trim off stem and any yellow leaves from Brussels sprouts. Slice sprouts vertically into 1/4-inch thick slices.
  • From lemon, grate 1 teaspoon peel and squeeze 1 tablespoon juice.
  • In 12-inch skillet melt butter over medium-high heat and cook 2 minutes or until light golden brown, stirring.
  • Add sliced Brussels sprouts and stir to coat with browned butter.
  • Add 1/4 cup water and cook 10 minutes, stirring occasionally.
  • Reduce heat and add lemon peel, peas, salt, pepper and another 1/4 cup water.
  • Cook 5 minutes, stirring occasionally and stir in juice.
  • Serves 8.
