Ingredients

  • 1 c. buttermilk
  • 2 c. sugar
  • 1 tsp. baking soda
  • 1 Tbsp. margarine
  • 1 tsp. vanilla
  • 2 c. pecans

Method

  • Into a very large bowl, put buttermilk, sugar and baking soda; stir until sugar is dissolved.
  • Cook over medium heat, stirring, until it turns brownish in color and reaches soft ball stage. Stir constantly.
  • Test by dropping a small amount into cool water to see if it forms a soft ball.
  • Remove from heat.
  • Add vanilla, margarine and pecans; beat until it becomes glossy and starts to crystallize.
  • Quickly spoon out onto wax paper into little patties.
  • Let cool.
  • If candy starts to turn sugary and hardens too fast, return to heat for a few minutes.
