- 1 large fresh cabbage, sliced
- 1 brown onion, sliced thin
- 4 medium tomatoes, diced
- 1 tablespoon salt
- 1/2 teaspoon pepper
- 2 ounces chopped pimiento
- 2 pints cold water
- 2 ounces butter
- 2 ounces flour
- 1 pint scalded milk
- 2 ounces grated cheese
- 1/4 teaspoon paprika
Method
- Place cabbage, onions, tomatoes, salt and pepper in a large pan. Add cold water; bring to a boil and simmer 15 minutes.
- Melt butter in a small pan and stir in flour, Gradually add milk and cook 5 minutes, stirring constantly until smooth and thickened.
- Add to vegetable mixture. Add cheese, pimiento, and paprika stirring until cheese is melted.
- Serve hot and eat whilst hot.
