- 1 large onion, chopped
- 1 green pepper, chopped
- 2 stalks celery, chopped
- 1 carrot, finely chopped
- 8 ripe tomatoes or 1 large
- 28 oz. can tomatoes, chopped
- 1 Tbsp. olive oil
- 1 lb. pasta (penne or ziti)
- Parmesan cheese
- 1 tsp. oregano
- 1/2 tsp. cayenne pepper
- 1/2 tsp. salt
- 1/2 tsp. cumin
Method
- Brown onion, pepper, celery and carrot in olive oil.
- When soft and slightly browned, add tomatoes and spices.
- Cook on low.
