Ingredients
- 1 to 2 lb. pork, cubed (can use roast, chops, steak, etc.)
- 3 to 4 zucchini (yellow squash can be used)
- 1 large onion, chopped
- 1 to 2 large cans tomatoes
- 1 to 2 Tbsp. cumin
Method
- Boil cubed pork in lightly salted water for about 30 minutes. Drain.
- Add canned tomatoes, squash and onion; simmer until vegetables are tender, about 20 minutes.
- Add cumin, salt and pepper to taste.
- (Can serve with warmed tortillas or rice.)
