Ingredients
- 6 c. thin sliced squash, cooked and drained
- 2 slightly beaten egg yolks
- 1 c. sour cream
- 2 Tbsp. flour
- 2 stiffly beaten egg whites
- 1 1/2 c. Cheddar cheese, grated
- 6 slices cooked bacon
- 1 Tbsp. melted margarine
- 1/2 croutons or bread crumbs
Method
- Mix squash with egg yolks, sour cream and flour.
- Fold in egg whites.
- Mix melted margarine with croutons or bread crumbs. Layer 1/2 squash and 1/2 of first mixture and 1/2 cheese.
- After second layer, top with crumbled bacon and croutons or bread crumbs.
- Bake at 350° for 20 to 25 minutes.
- Serves 8 to 10 people.
