Ingredients
- 4 boneless, skinless chicken breasts, pounded
- 2 Tbsp. olive oil
- 2 green onions, chopped
- 3 Tbsp. lemon juice
- 2 Tbsp. chopped parsley
- 3 Tbsp. Dijon mustard
- 1/4 c. chicken broth
- salt and pepper to taste
Method
- Combine all ingredients except chicken.
- Coat chicken completely with mixture.
- Place in a 350° oven, covered, for 20 minutes.
- Turn and baste and bake until done, about 10 minutes.
